Préambule / preamble
Concernant les viticultures durables, le GiESCO constate la confusion actuelle autour des notions de :
Au-delà de leurs multiples aspects techniques, aucune de ces viticultures durables ne comporte une véritable garantie ni une transparence totale. En conséquence, dans un esprit de consensus scientifique et technique et de respect d’une certaine morale ou éthique, une démarche méta-éthique est mise en œuvre. Le GiESCO propose une charte de viticulture durable, avec en premier des grands principes méta-éthiques de base capables de lever la confusion actuelle, et ensuite, sous ces conditions, la reprise de sa charte technique présentée en 2015 au GiESCO 19 de Montpellier – Pech Rouge.
Concerning sustainable Viticultures, the GiESCO notices the current confusion around the notions of:
Beyond their multiple technical aspects, none of those Viticultures involves a real guarantee or a full transparency. Consequently, in a spirit of scientific and technic consensus and respect for a certain morality and ethics, a meta-ethical approach is implemented. The GiESCO proposes a charter of sustainable Viticulture, with at first major meta-ethical principles which are able to raise the current confusion, and then, under such conditions, the resumption of the technical charter presented in 2015 at the GiESCO 19 in Montpellier – Pech Rouge.
La Viticulture appelée de façon simplifiée ‘BIO-MétaÉthique’ se construit d’abord sur des principes généraux qui se traduisent ensuite en décisions techniques au niveau d’une charte.
The Viticulture called in a simplified way ‘BIO-MetaEthics’ is built at first on general principles which are after translated into technical decisions inside a charter.
Ces principes sont mis en œuvre dans la démarche présentée par Giovanni Cargnello «BIO-MétaÉthique 4.1 », avec la méthode de notation par jury d’experts de la « Grande Filére MétaÉthique 4.1».
Those principles are used in the approach presented by Giovanni Cargnello “BIO-MetaEthics 4.1”, with the notation method by an expert jury of the “Great Chain MetaEthics 4.1”.
La charte technique qui lui est reliée est celle du GiESCO en 2015, coordonnée par Alain Carbonneau et Giovanni Cargnello.

Règles de base / Basic rules
1/ Mettre l’Homme au cœur des préoccupations dans un cadre universel:
Put Man in the depth of all concerns in an universal context:

2/ Assurer le minimum d’impact sur l’environnement en optimisant la culture :
Insure minimum impact on environment by optimizing cultivation technics:
maximum of natural biodegradale products, friendly practices
short channels, renewable energies, terroir sustainability
3/ Garantir la transparence et l’évaluation sur l’ensemble des opérations :
Warrant transparency and evaluation of all operations:
traceability of the production line, complete analyses of the products
use of secure scientific methods, wide communication
Exemples d’illustration / Illustrating examples
1/ Dans certaines situations où la présence humaine est nécessaire pour diverses raisons sociales et environnementales, la vendange mécanique qui est souvent avantageuse, sera moins bien notée que la vendange manuelle.
Under some situations where the presence of man is necessary for different social or environmental reasons, mechanical harvesting which is often a benefit, will be less scored than manual harvesting.
2/ Dans des vignobles où la valorisation du terroir est difficile et où les prix des vins est minimal du fait de la concurrence sur le marché international, la conduite en Taille Minimale (non taille) en mécanisation intégrale sera la mieux notée afin d’assurer le maintien des exploitations.
In vineyards where terroir valuing is difficult and the wine prices are minimum due to competition on the international market, the training in Minimal Pruning (zero winter pruning) and full mechanization will get the best score to insure the maintenance of farms.
3/ Dans le cas de terroirs permettant d’élaborer des vins originaux de haute qualité, le choix d’une conduite optimisant la qualité du vin et l’esthétique paysagère, comme la vigne en Lyre, obtiendra la note maximale quitte à entamer une démarche de changement de règle de l’AOP au niveau de la communauté des vignerons.
In the case of terroirs allowing to elaborate original wines of high quality, the choice of a training optimizing wine quality and landscape aesthetics, such as the Lyre vine, will get the maximum score even if it is necessary to launch an approach to change the rules of the POA at the level of the vine growers community.
4/ Dans la mesure où des produits naturels biodégradables et non nocifs pour l’homme et l’environnement n’ont pas une efficacité suffisante vis-à-vis du contrôle des bio-agresseurs, le recours de substitution à des pesticides de synthèse efficaces est préféré occasionnellement, de façon à préserver le potentiel qualitatif du raisin et à limiter le nombre d’interventions au vignoble, en particulier concernant les applications de produits à base de cuivre contre le mildiou.
As far as products which are natural, biodegradable and not harmful for the man and the environment, are not efficient enough to control pests, the use of alternatives such as efficient synthetic pesticides is occasionally preferred, in order to preserve the quality potential of the grape berry and to restrict the number of interventions in the vineyard, particularly concerning sprayings of copper products against downy mildew.

ELEMENTS OF A CHARTER OF SUSTAINABLE VITICULTURE PROPOSED BY THE GiESCO
Le GiESCO rassemble l’ensemble des pays viticoles du monde et la plupart des experts en Viticulture qui échangent leurs compétences sur la base du volontariat dans un esprit de coopération internationale. A ce titre le GiESCO, au terme d’une réflexion interne et d’un large consensus, propose un ensemble d’idées et de mesures capables d’aider au développement de divers modèles de Viticultures Durables sur des bases scientifiques et technologiques claires et consensuelles.
The GiESCO gathers all the vine-growing countries of the world which exchange their competences on the basis of willing in a spirit of international cooperation. In that way the GiESCO, after an internal thinking and a wide consensus, proposes a package of ideas and measures able to help the development of different models of Sustainable Viticultures on clear and shared scientific and technical basis.
Considérant que la demande mondiale au niveau des consommateurs, des producteurs et des responsables publics ou professionnels, est d’œuvrer pour le développement de modèles de Viticulture Durable prenant en compte le respect de l’environnement et de l’homme en tant que consommateur, producteur ou citoyen ;
Considering that the worldwide requirement at the level of consumers, producers and public or professional responsible people, is to act for the development of models of Sustainable Viticulture taking in account the friendship of environment and man as a consumer, producer or citizen ;
Considérant que la protection du vignoble est assurée classiquement par l’usage de nombreux pesticides et que certains posent à l’homme – cultivateur et consommateur – un risque de toxicité potentiel et parfois avéré dans certaines conditions ;
Considering that vineyard control is classically done by using many pesticides and that some of them give to man – grower and consumer – a risk of toxicity which is potential and sometimes proved under some conditions;
Considérant que l’image du vin qui est à la fois un produit de consommation, de plaisir sensoriel, de convivialité et de culture, ne peut s’accommoder d’un non-respect des objectifs précédents, et même doit être logiquement associée à celle d’un produit ‘naturel’ ;
Considering that the image of the wine is together a product of consumption, sensory agreement, social pleasure and culture, cannot be compatible with a non-respect of the preceding objectives, and more must be logically associated to this of a ‘natural’ product;
Considérant que les modèles actuels de Viticulture intégrée, biologique ou biodynamique, ainsi que les diverses certifications environnementales, tout en relevant des orientations de durabilité, sont techniquement incomplets, ou bien scientifiquement mal justifiés, notamment certains aspects des viticultures biologiques et biodynamiques, et que la Viticulture Durable est encore insuffisamment définie ;
Considering that the present models of integrated, organic or biodynamic Viticulture, and diverse environmental certifications also, even if they fit sustainable orientations, are technically incomplete, or badly scientifically justified, in particular some aspects of organic and biodynamic Viticulture, and that Sustainable Viticulture is still insufficiently defined;
Considérant que l’OIV a déjà encouragé à développer des actions dans de telles directions au travers de sa résolution CST 1/2008 ;
Considering that OIV has already encouraged to develop actions in such directions through its resolution CST 1/2008;
Le GiESCO propose les éléments clés suivants d’une charte de Viticulture Durable au terme d’une enquête générale, afin que les organismes responsables et les groupes professionnels concernés puissent y trouver des éléments de base utiles à valoriser leurs propres actions et certifications.
The GiESCO proposes the following elements of a charter of Sustainable Viticulture after a general survey, expecting that the concerned responsible organisms and professional groups can find basic elements useful to valorize their own actions and certifications.
I – Esprit de la charte / Spirit of the charter :
Trouver un consensus sur les critères importants de durabilité en Viticulture, qui reposent sur des bases scientifiques admises et qui soient partagés entre les diverses démarches déjà engagés dans ce sens, grâce à une coopération internationale entre experts en Viticulture, au niveau global d’une Méta-éthique
Find a consensus on important criteria of sustainability in Viticulture, which lay on admitted scientific basis and which may be shared between the different processes already launched in that way, thanks to an international cooperation between experts in Viticulture, at the global level of a Meta-ethics.
II – Conseils socioéconomiques / Socioeconomic advices :
L’orientation générale initiale est choisie parmi 3 modalités conduisant à la durabilité, suite à la décision des diverses personnes concernées par l’entreprise ou le territoire. A cet effet, la méthode du jury d’experts multidisciplinaires de la ‘Grande Filière’ est recommandée. Dès le départ, le choix des architectures ou systèmes de conduite de la vigne est directement associé à chacune de ces orientations en raison de leur influence socioéconomique déterminante.
The general orientation is chosen at first among 3 modalities leading to sustainability, as a decision of different peoples concerned by the company or the territory. For that, the method of the jury of multidisciplinary experts of the ‘Great Chain’ is recommended. Since the beginning, the choice of grapevine architectures or training systems is directly associated to those orientations due to their determining socioeconomic influence.
I – Orientation ‘priorité à la rentabilité’ : Assurer d’abord les conditions de rentabilité de l’entreprise ou du territoire avec des niveaux de rendement habituels, en priorité en fonction des caractéristiques du marché régional ou international, sachant que la durabilité est liée au succès commercial, mais aussi à un bon choix en matière de typicité et de qualité des vins.
I – Orientation ‘priority to profitability’ : Insure at first the conditions of profitability of the company or the territory with normal yield levels, giving priority to regional or international market, knowing that sustainability is linked to commercial success, but also to a good choice of wine typicality and quality.
Les systèmes de conduite conseillés sont des vignes larges économes en intrants, temps de travaux, énergie et coûts, comme : Taille Minimale (non taille), Taille et Palissage simplifiés, Rideau simple.
The advised training systems are low-input, saving labour hours, energy and costs, vines, such as: Minimal Pruning (no pruning), simplified Pruning and Trellising, simple Curtain.
II – Orientation ‘priorité à la qualité’ : Assurer d’abord l’obtention de la qualité des raisins et des vins par rapport à une typicité définie, en considérant que c’est le meilleur investissement rentable à long terme ou bien la condition nécessaire au maintien d’une notoriété déjà acquise, tout en intégrant aussi des conditions permettant une production et une rentabilité acceptables.
II – Orientation ‘priority to quality’ : Insure at first the production of quality grapes and wines referring to a defined typicality, considering it is the best profitable investment on the long term or the necessary condition to maintain a notoriety already obtained, while also integrating conditions allowing acceptable yield and profitability.
Les systèmes de conduite conseillés sont des vignes reconnues pour offrir régulièrement la meilleure qualité sur un ensemble de terroirs, comme : Lyre, Lyre pliable, Espalier (à ‘Hauteur de feuillage / Ecartement entre rangs’ optimum), Espalier modulé (moitié pliable).
The advised training systems are vines recognized to regularly produce the best quality over a wide range of terroirs, such as: Lyre, foldable Lyre, Vertical Shoot Positioning – VSP (at optimal ‘foliage Height / row Spacing’), modulated VSP (half foldable).
III – Orientation ‘priorité à l’homme’ : Assurer d’abord les meilleures conditions de vie de l’ensemble des acteurs, les producteurs et leurs employés, les habitants, les clients ou les touristes, avec une attention particulière au paysage, à l’histoire et à la culture, mais aussi avec des conditions acceptables pour le rendement et la qualité des produits, et la rentabilité.
III – Orientation ‘priority to man’ : Insure at first the best living conditions of all actors, growers and their employees, habitants, clients or tourists, giving a particular attention to landscape, history and culture, but also with acceptable conditions for the yield and the quality of products, and profitability.
Les systèmes de conduite conseillés sont des vignes particulièrement esthétiques ou historiques, comme : Lyre, Harpe (terrasses étroites), Gobelets (ouverts), Architectures ‘Toit’.
The advised training systems are particularly esthetic or historical vines, such as: Lyre, Harp (narrow terraces), Vase (open), ‘Roof’ Architectures.
Selon des conditions particulières, au niveau de l’entreprise ou du territoire, le suivi de l’une des trois orientations choisies au préalable pour développer un modèle de durabilité, passe par le choix de l’un des cinq types de production ci-après qui sont déterminés par des contraintes de l’environnement ou de la technique.
According to particular conditions, at the level of the company or the territory, following one of the three orientations chosen at first to develop a model of sustainability, goes through the choice of one of the next five types of productions which are determined by constraints of environment or technique.
III – Conseils techniques / Technical advices:
Les conseils techniques concernent différents niveaux hiérarchiques : types de production, stratégie de protection, mesures générales.
The technical advices concern different hierarchical levels: types of production, strategy of control, general measures.
Selon les possibilités environnementales, techniques ou règlementaires en cours, et les contraintes socioéconomiques afférentes, cinq types de production majeurs peuvent être identifiés, avec pour chacun une adaptation particulière des conditions de durabilité.
In function of the environmental, technical or ongoing regulations possibilities, and the corresponding socioeconomic constraints, five main types of production may be identified, including for each a particular adaptation to the conditions of sustainability.
Le conseil n°1 est d’afficher l’appartenance à l’un des cinq types suivants, et si besoin de la modifier s’il y a un changement majeur dû au climat du millésime ou à l’encépagement.
The advice n°1 is to indicate the belonging to one of the five following types, and to change if necessary when there is a major change due to the climate of the vintage or to the variety.
Le conseil n°2 est de préciser la méthode de protection du vignoble qui est réellement appliquée avec efficacité dans le cadre du cahier des charges choisi, et d’apporter les bases scientifiques nécessaires et surtout la preuve des avantages annoncés en matière de résidus.
The advice n°2 is to precise the method of vineyard control which is effectively applied with efficiency in the context of the chosen technical policy, and to bring the necessary scientific basis and above all the proof of the announced advantages regarding residues.
Pour chacun des 5 types de production durable, 3 stratégies de protection sont considérées : intégrée, biologique, biodynamique. Chacune doit fournir non seulement un affichage de ses procédés, mais encore les résultats de leur innocuité vis-à-vis de l’homme et de l’environnement dans les normes internationales :
For each of the 5 types of sustainable production, 3 strategies of control are considered: integrated, organic, biodynamic. Each of them must give not only a description of its processes, but also the results of their safety regarding man and environment according to international standards:

NB : Concernant les nouveaux cépages résistants, il est conseillé de fournir une information minimale sur les géniteurs de typicité et de résistance, ainsi que des arguments montrant la durabilité des résistances (ces dernières n’étant jamais absolument garanties, il convient d’être prêt à traiter en cas de contournement de la résistance ou de recrudescence de parasites ou ravageurs secondaires).
NB : Concerning the new resistant varieties, it is advised to give minimal information on the genitors of typicality and resistance, and also arguments showing the sustainability of the resistances (those resistances never being absolutely guaranteed, one must be ready to spray in case of resistance overcoming or emergency of secondary parasites or pests).
NB : Il est également conseillé d’indiquer la teneur en SO2 et en éthanal des vins, quel que soit le type choisi et même le procédé de vinification.
NB : It is also advised to indicate the content of SO2 and ethanal of the wines, whatever be the type of production and even the winemaking process.
Le conseil n°3 est d’indiquer dans la liste proposée les démarches complémentaires de durabilité qui sont suivies par tous les types de production et stratégies de protection, au niveau de l’exploitation ou du territoire.
The advice n°3 is to indicate inside the proposed list the complementary processes of sustainability which are followed by all types of production and strategies of control, at the level of the company or the territory.
