Abstract: Rosciola is an antique red grape variety in the Lazio region (Italy) in the area between the Simbruini mountains and the high valley of Aniene. The name “Rosciola” is probably due to the light red color that the skin berries have to maturity. The oenological aspect was observed and evaluated over various vintages (Ciolfi G. et al., 2009). The studies carried out on this variety have allowed us to evaluate the types of products adapted to enhance the characteristics of the cultivar and at the same time find it an ideal commercial placement (Pietromarchi P. et al., 2011). Through the results obtained we developed the production of a grapes juice to improve the production and extend commercial offer of a winery. The must obtained from Rosciola grapes is generally characterized by a low glucidic content associated with a good content of phenolic compounds and organics acids. After manual harvesting, the bunches of grapes were transported rapidly to the cellar for the work phase, in according with an innovative method of production realized by researchers of the CREA-ENC (Velletri) (Tiberi D. et al., 2009). Furthermore, the choice of producing this kind of juice fruit may determine not only the recovery and safeguard of the Rosciola cultivar but also the concrete opportunity according to "MetaEthics 4.1C" sustainability (Cargnello, 1997, 2000, 2017a, 2017b; Carbonneau, 2012; Cargnello and Carbonneau 2007, 2015; Cargnello and Col., 2014 ) of the “Charter of Sustainable Viticulture proposed by the GiESCO” (Carbonneau, Cargnello 2013, 2015, 2017) for the viticulture of the territory, recovering and safeguard the marginal areas.
