A NEW APPROACH IN THE ADAPTATION OF VARIETIES TO GLOBAL WARMING :
VARIETAL DIFFERENCES IN SUGAR CONTENT AT VERAISON

Abstract
In warm climatic conditions, the red sugar concentrations of red varieties reach more than sufficient levels for obtaining high quality wines, but this is often not the case with colour. This relative stability of sugars compared to the sensitivity of anthocyanins to temperature is due to the different temperature ranges for optimal activity of the enzymes producing sugars (18 to 33o C) and pigments (17 to 26o C). Temperatures above 30o C can inhibit the formation of anthocyanins. This trend toward increasing temperature due to climate warming, emphasizes the decoupling between anthocyanins and sugars and produce very alcoholic wines.
With the aim to search genotypes existing and more apt to produce low-alcohol wines, we studied some minor varieties of the DOCa Rioja. We investigated the possible decoupling between anthocyanins and sugars in different minor grape varieties. We analysed the sugar content at the onset of ripening under the same cultivation conditions.
There were significant differences between minor varieties of DOCa Rioja with respect to the concentration of sugar at the beginning of veraison. Varieties with lower sugar concentration are Alicante Bouschet (Garnacha Tintorera), Moristel and Trepat. Such varieties would be best adapted to the climate warming trend. It should also be noted that there was no relationship between the concentration of sugar at the beginning of veraison and the date at which veraison occured.

Résumé
Dans des conditions climatiques chaudes, les variétés rouges atteignent des niveaux plus que suffisamment de sucre pour obtenir des vins de qualité mais pas avec la couleur. Ces différences de comportement sont dues aux différentes plages de température d'activité optimale de l'enzyme produisant des sucres (18 à 33° C) et producteurs de pigment (17-26° C). Les températures supérieures à 30° C peuvent inhiber la formation des anthocyanes. Cette tendance à la hausse de la température due au réchauffement climatique, souligne le découplage entre les anthocyanes et les sucres et produit des vins très alcoolisés.
Dans le but de rechercher des génotypes existants et plus aptes à produire des vins allégés en alcool, nous avons pris, dans ce travail, l'étude des variétés minoritaires de la DOCa Rioja. Nous étudions le découplage possible entre les anthocyanes et les sucres dans les différentes variétés minoritaires. Nous analysons la teneur en sucre à la véraison dans les différentes variétés minoritaires de DOCa Rioja, dans les mêmes conditions de culture.
Il existe des différences significatives entre les variétés minoritaires de la DOCa Rioja par rapport à la concentration de sucre á la véraison. Variétés avec concentration en sucre inférieure sont Alicante Bouschet (GarnachaTintorera), Moristel et Trepat. Ces variétés seraient mieux adaptées à la tendance au réchauffement climatique. Il convient également de noter qu'il n'y a pas de relation entre la concentration de sucre à la véraison et la date à laquelle cette véraison se produit.
