SELECTION OF VITIS VINIFERA L. INTRASPECIFIC HYBRIDS FOR OBTAINING WINES WITH HIGH PHENOLIC CONTENT SELECCIÓN DE HÍBRIDOS INTRAESPECÍFICOS DE VITIS VINÍFERA L. PARA OBTENER VINOS DE ALTO CONTENIDO FENÓLICO

Abstract: Monastrell is the most extended variety in the South east of Spain. One of our strategies for improving its wines consists in selecting intraspecific hybrids arising from crosses between Monastrell and other high quality varieties, such as Cabernet Sauvignon, looking for those well adapted to our conditions, with a high polyphenol content and a high phenolic extractability, in order to produce highly colored wines. The phenolic content of grapes from Monastrell x Cabernet Sauvignon selected hybrids (together with Monastrell and Cabernet Sauvignon grapes) were studied. At the end of the alcoholic fermentation, wines made from the grapes, were analyzed and their chromatic characteristics and antioxidant capacity determined. Monastrell showed the lowest phenolic extractability from skins to musts during maceration. Cabernet Sauvignon showed a higher easiness in extracting flavonoids than Monastrell, probably related to a less rigid hypodermis cell wall structure. Grapes from selected hybrids presented a very high anthocyanin content and variable content in skin and seed tannins. The wines from these hybrid grapes presented a very high phenolic content, although some differences existed. Some selected hybrids could be considered as very interesting plant material since their winemaking leaded to high colored wines with a high antioxidant capacity.
