PERFUME OF VINE FLOWERS: EARLY RESEARCH ON “SENSORY ANALYSIS” PARFUM DES FLEURS DE VIGNE: PREMIERES RECHERCHES SUR «L'ANALYSE SENSORIELLE»

Abstract: The experience gained by us in the 70s on perfume of vine flowers together with the methodology of the "Great Chain MetaEthics 4.1C" led us to research on the topic in which particular attention was paid, to genotype choice of the consumer, but also to the innovative phenotype. Aims of the researches were: 1-to identify any sensory descriptors discriminating between: species, varieties, clones, progenitors of different vines, as well as productive models (Sylvoz, UNIC-Politronco and UNI-PRORAB, Cordon de Royat and Guyot) and different environments (Villanova di Livenza Motta and Tezze di Piave-TrevisoItaly), 2-to identify any relationship between flower-fruit-wine-vineyard-terroir-territory of origin, consumer also relatively to the traceability and re-traceability of the product, 3-to increase in the product of the typical characteristics: varietal, clonal, of the vineyard, the "terroir" and "territoory" of origin, 4to innovate process, product, communication, marketing and storytelling in light of the "Great Chain MetaEthics 4.1C" and this genotypically based on the choice of the consumer, but also on the innovative phenotypic and last but not least, industrial and everything always in the light of the "Great Chain MetaEthics 4.1C". The thesis comprised of aromatic vine varieties, semi-aromatic and "neutral" red and white, species, varieties, clones, of crossings and their progenitors, cultivar, as well as different productive models and environments. Results showthat it possible to define a relative sensory analysis tab of the vine flowers which allows to get and highlight any differences between different vines, species, varieties, clones, as well as wine-productive models and different environments.
