EVALUATION OF SOIL AND CANOPY MANAGEMENT STRATEGIES IN HIGHLY SUSTAINABLE VITICULTURAL SYSTEMS

Abstract

Since 2008, long term research has been conducted in a hilly, organically managed vineyard of cv. Sangiovese located in Northern Italy (Faenza, Ravenna), with the aim of innovating and improving the production process, by establishing highly sustainable viticultural systems. Different soil (e.g. intercropping) and canopy managements (e.g. post-veraison trimming and defoliation, “semi-ballerina” effect) strategies and the use of biodynamic preparations have been evaluated. Neither fertilizers nor irrigation water were used. The vines have gradually achieved an appropriate vegetative-productive balance, with a satisfactory yield, optimal nutritional status, high quality grapes and wines. The use of biodynamic preparations (500, 500k, fladen, 501) did not modify fruit yield, soluble solid concentration, pH and titratable acidity of the berry juice. Post-veraison trimming reduced bunch weight and fruit yield compared to trimming at fruit set. The effects of biodynamic production practices on composition and sensory attributes of Sangiovese wines were examined in the 2 years (2009 and 2010) during conversion from organic (ORG) to biodynamic (DYN) cultivation method. During the first year (2009), the DYN wines were characterized by low alcohol strength, colour intensity, total polyphenols, monomeric anthocyanins and catechin. Conversely, in the second year, DYN wines differed from the organic wines being lower in terms of total polyphenols and phenolic compounds, including polymeric pigments, co-pigmentation, tannins and iron-reactive polyphenols. The ORG wine produced on 2009 showed a more complex aroma profile; however, sensory differences between ORG and DYN wines were almost indistinguishable during the second year. The concentrations of ochratoxin A and biogenic amines were far below health-hazard threshold. Overall, the data indicate that the highly sustainable cultivation methods enable the attainment of healthy, productive vines producing good wines.

Résumé

Depuis 2008, une recherche à long terme est en cours dans un vignoble en gestion biologique, cv. Sangiovese, situé dans les collines, en Italie du Nord (Faenza, Ravenna), dans le but d'innover et d'améliorer le processus de production, en établissant des systèmes viticoles hautement durables. Différentes stratégies pour gérer la végétation (ex. écimages et effeuillage en post-véraison, effet ′′semi-ballerina′′) et le sol (ex. cultures intercalaires) sont en cours d'évaluation. Ni engrais ni eau d'irrigation ont été utilisés. Les vignes ont progressivement atteint un équilibre végétatif-productive approprié, confirmé par le rendement satisfaisant, l'état nutritionnel optimal, l’haute qualité des raisins et des vins. L'utilisation de préparations biodynamiques (500, 500k, Fladen, 501) n'a pas modifié le rendement en fruits, la concentration en solides solubles, le pH et l'acidité titrable du jus de baies. A noter que l’écimage en post-véraison a réduit le poids de la grappe et la productivité par plante par rapport à l’intervention effectué en nouaison. Les effets des pratiques de production biodynamiques sur la composition et les attributs sensorielles des vins Sangiovese ont été examinés dans les deux années (2009 et 2010), après la conversion à partir du méthode de culture biologique (ORG) pour biodynamique (DYN). Au cours de la première année (2009), les vins DIN ont été caractérisés par une faible teneur en alcool, intensité de la couleur, concentration en polyphénols totaux, anthocyanes monomères et catéchine. La deuxième année, inversement, les vins DYN différaient des vins biologiques en termes de polyphénols totaux et des composés phénoliques, y compris les pigments polymères, de co-pigmentation, tanins et polyphénols fer réactives. Le vin biologique, d'abord a présenté un profil aromatique plus complexe. Cependant, les différences étaient presque indiscernables dans la deuxième année. Les concentrations de l'ochratoxine A et des amines biogènes sont au-dessous du seuil dangereux pour la santé. Dans l'ensemble, les données indiquent que les méthodes de culture hautement durables permettent d’obtenir de vignobles et de vins sains et généreux.
