ELEMENTARY CHARACTERIZATION OF DIFFERENT PARTS OF GOETHE GRAPES USING ICP-OES CARACTERIZACIÓN ELEMENTAL DE DIFERENTES MATRICES GOETHE UVA MEDIANTE ICP-OES

Abstract: American and crossbreed grapes varieties show a good adaptation to the climatic conditions of different Brazilian regions, representing about 70% of total production of Santa Catarina state (Brazil). Goethe is a white grape variety largely grown in the south region of Braziland represents the first geographical recommendation of the state. In this sense, the purpose of this work was to characterize the skin, the pulp and seeds of Goethe grapes in relation to their elementary composition. After grape harvesting, vintage 2015, the skin, pulp and seeds were separated and the determination of the elementary composition (four macro elements, four microelements and four metals) of grape’s parts was performed by inductively coupled plasma optical emission spectrometry. Results show a significant difference (p<0,05) into the content of macro elements present into the skin, the pulp and seeds. Potassium exhibits a greater concentration into the pulp, whereas calcium and magnesium are more concentrated in the seeds. Among the microelements, iron was reported in a greater concentration into three parts of grape, while zinc, copper, and manganese were less concentrated. The metallic elements lead, aluminum, nickel and arsenic were not detected. Our results shows that Goethe grape might represents a source of essential elements for the human health. However further studies are necessary to prove the bioaccessibility of these elements.
