Abstract: 40 years of GiESCO activities are briefly presented, insisting on the recent evolutions. Then the engagement for sustainability since 2015 is justified, particularly the main principles : the objective of priority to man, the research of the minimum impact and the guarantee of transparency, communication and evaluation. Finally the GiESCO spirit and attitude fit marvellously well the famous sentences Aristotle teached in the Antique time in Thessaloniki and Greece. Keywords : GiESCO history, International Viticulture, sustainable Viticulture, Charter, Aristotle. 1. Introduction The 22th GiESCO meeting in Thessaloniki represents an important step, because it is the first time our group helds its congress in Greece, and because a new team is animating the association, Laurent Torregrosa as President and Hernán Ojeda as Vice‐President, Alain Carbonneau being Honorary President. Then it is time to describe the global trajectory of our GiESCO over 40 years of activity. 2. GiESCO trajectory It is detailed in table 1. Table 1. GiESCO : a 40 years trajectory. GiESCO engagement for sustainability The general activity of our GiESCO which gathers all activities is its engagement for sustainablility. The main principles of our charter ‘BIO – MetaEthics’ Viticulture are : 1/ Put Man in the depth of all concerns in a universal context: (grower, consumer, citizen, work valuing, education, security) 2/ Insure minimum impact on environment by optimizing cultivation technics: (maximum of natural biodegradable products, friendly practices, short channels, renewable energies, terroir sustainability) 3/ Warrant transparency and evaluation of all operations: (traceability of the production line, complete analyses of the products, use of secure scientific methods, wide communication). Those conditions will be applied into the practice by establishing direct contracts with the producers as it is presented during this congress. 4. Bibliography GiESCO proceedings n°1‐20. 5. Conclusion as Homage to Aristotle Finally in Thessaloniki we must profit by the Aristotle’s heritage. This is illustrated as a virtual dialogue with our Master Aristotle. Figure 1 presents the Halkidiki region where Aristotle was born (in Stagira) and where his tomb stays. Figure 2 shows Aristotle himself and his short Biography. June 23 - 28, 2019 | Thessaloniki | Greece GiESCO Thessaloniki | 22 21st GiESCO International Meeting: ‘A Multidisciplinary Vision towards Sustainable Viticulture’ Aristotle (in Stagira : 384 B. J.‐C. ‐ 322 B. J.‐C.),in ancient Greek: Ἀριστοτέλης. He is a famous Greek Philosopher of the Antiquity and his thoughts are immortal. He was a Platon’s disciple, member of the famous Academy and the tutor of Alexander the Great. He invested himself in all knowledge fields : Biology, Physics (Nature Sciences), Metaphysics, Logics, Poetics, Politics, Economics, Rhetorics. Above all, Aristotle considers Philosophy, not only as a search of knowledge, but also as the Science of Sciences based on the interrogation of ‘why’ ! Fancywe are in front of Aristotle asking many questions to the Master about our GiESCO entreprise, waiting for his advices. Here is the record of my personal conversation pointing out the real thoughts of the Master.  The GiESCO was a personal dream : but what can we hope from it, Master ? Λέει ο Αριστοτέλης (Aristotle says) : « Hope is the dream of an awake man». Yes, my dream is not a mirage, it’s the hope of your conscious awake servant which becomes reality…  Must not be foolish for launching such an entreprise, Master ? Λέει ο Αριστοτέλης : « There is no genius without a grain of madness » Without invoking genius, the birth of an entreprise always does require a piece of madness…  After all, isn’t it only a game, Master ? Λέει ο Αριστοτέλης : « You must play for becoming serious » OK let’s go and play as children ! …  How can my experience, my knowledge, be connected to my childhood, Master ? Λέει ο Αριστοτέλης : « Knowing is reminding » Well Master ! Let’s dive in our childhood and our memories for better knowing and understanding…  Nevertheless, isn’t there a big part of naivety or even banality, Master ? Λέει ο Αριστοτέλης : « The beginning of every sciences is the astonishment of what things are what they are » That’s true : things which look evident or banal often reveal universal and deep realities…  Aren’t we also mistaken by our passion for vine and wine, Master ? Λέει ο Αριστοτέλης : « Nothing in our understanding which was not coming through our senses » Therefore, be able to use our senses, sensorial analysis for example, for understanding…  Nevertheless, aren’t we the prey of the doubt, Master ? Λέει ο Αριστοτέλης : « The ignorant asserts, the scientist doubts, the wise man thinks » and « The doubt is the beginning of the wisdom » So, the doubt is a quality for a scientist such as curiosity or logics ; it can lead to something which is effectively greater which is philosophical thought and wisdom…  For a researcher who is also a teacher, is this approach realistic, Master ? Λέει ο Αριστοτέλης : « The distinctive mark of a scientist, is his ability to teach » No doubt : knowledge and knowledge teaching are the same entity…  But all that, isn’t it an impossible challenge, Master ? Λέει ο Αριστοτέλης : « You must prefer what is impossible but probable, to what is possible but incredible » There is what can effectively give courage to ‘attack windmills’ !... June 23 - 28, 2019 | Thessaloniki | Greece GiESCO Thessaloniki | 23 21st GiESCO International Meeting: ‘A Multidisciplinary Vision towards Sustainable Viticulture’  And if we introduce poetry, Master ? Λέει ο Αριστοτέλης : « Poetry is something more philosophical and noble than History : Poetry tells rather the general, History the particular » and « This is not the function of the Poet to tell what happened, but well to tell the events as they might have been happened, and the possible events according to their probability or the necessity » So let’s be guided by the poetic intuition and hope that the beauty will be also the true…  Such a work can be really useful to other people, Master ? Λέει ο Αριστοτέλης : « Man is a social animal » That’s excatly my feeling…  How can I well shape all that to reach my objectives, Master ? Λέει ο Αριστοτέλης : « A book is good if the author tells all it is needed, only what it is needed, and properly » I’ll do my best, Master !...The GiESCOis convincing when it writes proceedings, scientific and technical publications, and also some books open to Culture : here is mine‘In vite veritas’ !
