Présentation des éléments-clés ayant permis l'inscription des viticultures de Bourgogne et de Champagne au patrimoine mondial de l'UNESCO, et réflexion sur la possibilité de maintien de l'aspect général du paysage de ces régions en changeant le système de conduite.
 

The viticulture of Champagne and Burgundy recognized as a worldwide patrimony of UNESCO

Presentation of key-elements which allowed the recognition of the Viticulture of Burgundy and Champagne as a worldwide patrimony of UNESCO, and consideration about keeping the general aspect of the landscape of those regions while changing the training system.

Notion fondamentale de "Triptyque Biologique" expliquant la physiologie de la plante

Présentation de l'activité de recherches d'Alain CARBONNEAU à l'INRA Bordeaux et à Montpellier SupAgro, dans la période 1973-2015 et les domaines de l'écophysiologie et de la conduite de la vigne. Les thèmes suivants sont résumés :

• Evolution du contexte de la conduite du vignoble et de la viticulture et perspectives ;
• Révolution dans les concepts de maîtrise de la qualité du vin : de l'attitude restrictive fondée sur la densité de plantation et le rendement, au raisonnement positif de la conduite optimale ;
• Caractérisation de l'architecture de la végétation et du microclimat associé :
• Régulation des relations physiologiques et du bilan de carbone dans la plante entière-Vigne ;
• Modélisation de la qualité et de la typicité du vin : Triptyque Biologique "Surface Foliaire Exposée-Production-Vigueur" ; théorie de la maturation et de la typicité du raisin :
• Applications à la mise au pont de nouveaux systèmes de conduite pour différents vignobles : Lyre et Lyre pliable (productions "Haut de gamme" et raisin de table), Taille Minimale (productions "entrée et coeur de gamme"), améliorations des systèmes existants :
• Applications aux méthodes de gestion de l'eau ou de pilotage de l'irrigation ;
• Climatologie des vignobles du monde, et utilisation dans le suivi du changement climatique et la caractérisation des terroirs viticoles ;
• Elaboration de systèmes intégrés et vitiviniculture durable fondés sur l'innovation en matériel végétal et techniques culturales.

Fondamental concept of "Biological Triptych" explaining plant physiology

Présentation of Alain CARBONNEAU's research activity at INRA Bordeaux and Montpellier SupAgro, within the period 1973-2015, in the fields of grapevine Environmental Physiology and training management. The following themes are summarized ;

• Evolution of the context of vineyard training and viticulture, and perspectives ;
  Revolution in the concepts of wine quality monitoring : from the restrictive attitude based on planting density and yield, to the positive attitude of optimal training management ;
• Characterization of the canopy architecture and the associated microclimate ;
• Regulation of physiological relations and carbon balance in the whole plant - Grapevine ;
• Modelling wine quality and "Typicity" ; Biological Triptych "Exposed Leaf Area-Production-Vigour" ; theory of the grape berry maturation and "typicity" ;
• Applications to perfect new training systems for different vineyards ; Lyre and foldable Lyre (high quality productions and table grapes), Minimal Pruning (standard quality vineyards), improvments of existing systems ;
• Applications to methods of water management  and irrigation monitoring ;
• Climatology of worldwide vineyards, and use for following the climate change and characterizing vine-growing terroirs ;
• Perfecting integrated systems of sustainable vitiviniculture based on innovative varieties and cultivation technics.

La méta-éthique appliquée à la viticulture :
Un enjeu de société et une démarche de viticulture durable

Divers exemples de cas de méta-éthique sont illustrés au sein de la filière viticole : les concepts du "Bio", des hybrides, des territoires, en oenologie, en communication. Ils montrent l'intérêt de la recherche de consensus entre divers acteurs ou tendance concurrentes, son utilité dans une démarche de viticulture durable, ainsi que la justification première à accorder à la culture.

Meta-ethics applied to viticulture :
A social challenge and a process of sustainable viticulture

Several examples of meta-ethics are illustrated in the wine sector : the concept of "organic" hybrids, territories, in oenology, in communication. They show the interest to search a consensus between different actors or concurrent tendencies, its usefulness in a process of sustainable viticulture, and also the justification of the first place given to culture.
